Context

The biodiversity of oil‑ and protein‑rich seeds and cereal grains offers a wide array of nutrients and natural assemblies (such as oleosomes and protein bodies), which exhibit valuable functional properties.

Objectives

The OBEINN project revisits traditional oil‑refinery processes by proposing organic‑solvent‑free extraction methods for lipid assemblies from oil‑ and protein‑rich seeds, as well as lipid‑rich cereal fractions of nutritional interest. It also aims to explore the functional properties of the extracted lipid assemblies in various formulations, such as infant nutrition products.

Expected results

The project will yield a comprehensive database on the physicochemical functionalities of lipid assemblies and formulations derived from them, as well as a detailed life‑cycle assessment and cost‑analysis of the newly developed processes in comparison to conventional oil extraction and refining methods
