Formulations of lipid bioactives encapsulated by micronised and dry‑fractionated brewery spent grain
Context
A wide variety of markets are impacted by encapsulation, and the rising concerns regarding Clean Label and/or Nutri‑Score improvement are generating increasing challenges in stability and encapsulation—especially as formulations become enriched with naturally‑derived, minimally processed, often less stable compounds.
Objectives
FOLIBRASS aims to harness plant‑based powders derived from brewery spent grain (BSG) to encapsulate bioactive lipid compounds, and subsequently integrate these encapsulates into typical formulated products — such as sprayable solutions, sauces, milks and creams — under industrially relevant conditions (i.e. sector‑specific pH, salt content, mixing regimes and preservative systems).
Expected results
This project encompasses the generation of results ranging from the fundamental understanding of composition–property relationships, right through to the proof of concept under real-world application conditions.
