Context

The HEMICOAT project aims to develop novel biomimetic materials composed of cellulose nanocrystals (CNCs) coated with xyloglucan to improve the colloidal stability of CNCs—particularly enhancing resistance to ionic strength variations—and thereby imparting innovative surfactant properties.

Objectives

The objective of this project is to understand the structure–property relationships governing xyloglucan adsorption onto cellulose nanocrystals, in order to develop xyloglucan‑decorated CNCs capable of stabilizing emulsions.

Expected results

Xyloglucan–cellulose nanocrystal complexes remarkably stabilize Pickering emulsions at significantly lower concentrations than cellulose nanocrystals alone.
